 Quick and easy Chicken Curry

Today I have the MOST amazing, simple and easiest dinner recipe ever! Definitely not traditional but still amazing, good and hearty! Perfect for the upcoming cold weather!!!



  • Ingredients:

  • 2 Large chicken breast 
  • 1 Can of coconut milk
  • 1 14.5 oz can of petite diced tomatoes (drained)
  • 1 Small onion diced
  • 1 tsp Curry powder 
  • 1 1/2 - 2 tsp Sea salt 
  • 1 tsp Turmeric (optional)
  • 1/2 tsp Garlic powder 
  • 1 /4 tsp Ground pepper
  • 1 tsp Cornstarch
  • 1/3 C of water 
  • 2 Tbs oil of choice   



  1. Heat pan with 2 Tbs of oil on med high 
  2. Add onions and cook 4 mins constantly stirring
  3. Add garlic cook 1 min
  4. Add all dry seasonings, continue to stir until it forms a paste 
  5. Add tomatoes, chicken, 1/3 C water and coconut milk, stir well
  6. Bring to boil, cover and set on med for 20 mins
  7. Add 1 Tbs cornstarch and 2 Tbs water (slurry) and simmer for a few mins
  8. Add 1/2 squeezed lemon (trust me on this) Stir
  9. Serve with Jasmine rice or basmati
